Tomato and chipotle soup with basil
Ingredients:
- 6 Red Tomatoes
- 2 Garlic Cloves
- 5 Tbsp Olive Oil (75ml)
- 1 Tbsp Basil Leaves and 4 branches to decorate
- 4 Cambray Onions in halves
- 1 can of San Marcos Chipotles (215g)
- Salt and Pepper
- Goat Cheese (optional)
Instructions:
01. Roast the tomatoes and garlic cloves.
02. Put them in a bowl and pour 4 Tbsp of oil.
03. Add the basil leaves.
04. Heat the remaining oil and sauté the onions.
05. Add the tomatoes, garlic, chipotles and 2 cups of water and let everything boil.
06. Lower the heat and cook until thickened.
07. Season with salt and pepper.
08. Blend everything until you have a puree.
09. Add some basil branches to decorate.
San Marcos tip: Make it easier using canned tomato puree. You can add goat cheese.
